Seafood Florentine Bake 2 lbs. fresh fillets -- flounder, haddock, pollock, etc. 1 tsp. salt 1/2 tsp. onion powder 1/2 tsp. pepper 1 can condensed cream of shrimp or cheddar cheese soup 1 10 oz. pkg. chopped spinach, thawed and well drained 2 cups Bisquick baking mix, or equivalent 1/3 cup grated Parmesan cheese 1 cup milk 2 eggs Heat oven to 350 degrees or preheat a Dutch oven. Arrange fish in greased pan or in the Dutch oven with a coating of oil on the bottom. Add salt, pepper, and onion powder to taste. Spoon soup over fillets and top with spinach.
